На среднем огне в кастрюле нужно растопить сливочное масло (70 г) и добавить к нему 2 ст.л. тростникового сахара (можно с горкой). Перемешивать сливочное масло до тех пор, пока сахар не растворится. Когда смесь начнет закипать, добавьте 3 ст.л. томатной пасты или соуса, измельчённый на мелкой терке чеснок (1 зубчик), соль, чёрный перец по вкусу.
Затем влейте соус чили, остроту соуса лучше регулировать по Вашему вкусу. На этом этапе можно добавить 1/2 ст.л., попробовать на остроту – если хочется поострее, то добавить ещё. У меня обычно уходит 1-2 ст.л. в зависимости от используемого соуса.
После этого доведите соус почти до состояния кипения и сразу снимите с огня, чтобы он не успел расслоиться и остался однородным.
